Poppy-seed sponge with vanilla cream in a cup (keto)


Sponge:

  • 1 egg
  • 1 tablespoon melted butter
  • 1 tablespoon heavy cream
  • 4 tablespoons almond flour
  • 1 tablespoon coconut flour
  • 1 pinch baking powder
  • Sweetener to taste


Preparation:

Mix all the ingredients.Pour the mixture into a 15×15 cm microwave-safe dish.

Cook in the microwave for 3 minutes.



Vanilla cream:

  • 6 tablespoons heavy cream
  • 2 egg yolks
  • 1 tablespoon vanilla extract
  • Sweetener to taste


Preparation:

Heat the mixture over a double boiler, stirring constantly,until it thickens into a smooth cream.


Poppy-seed mixture:

  • 3 tablespoons poppy seeds
  • 1 tablespoon almond milk
  • Sweetener to taste
  • Lemon zest
  • A few drops of vanilla extract
  • 1 pinch cinnamon

Mix everything together.



Preparing the sponge:

Remove the sponge from the microwave,cut it into 1 cm pieces,and lightly toast them over medium heat for 3–5 minutes.

  1. Vanilla cream
  2. Sponge pieces
  3. Poppy-seed mixture
  4. Vanilla cream
  5. Sponge pieces
  6. Poppy-seed mixture
  7. Vanilla cream
