Keto Christmas Chocolate Salami (2 logs)



Ingredients for the chocolate base:

  • 1.2 dl water or unsweetened almond milk
  • 160 g butter
  • 100 g erythritol or an erythritol–stevia blend
  • 80 g sugar-free dark chocolate (min. 85–90%)
  • 40 g unsweetened cocoa powder
  • 160 g mixture of almond flour and coarsely chopped walnuts
  • ⅔ teaspoon vanilla extract
  • 2 pinches of salt


For the “cookie” pieces:

  • 1 tablespoon butter or coconut oil
  • 1 egg yolk
  • ½ teaspoon vanilla extract
  • 1 tablespoon sweetener
  • ½ cup (2.5 dl) almond flour


Instructions:

1.Mix the ingredients for the cookie dough and divide the mixture into four parts.Shape small flat discs and microwave for 1 minute.Let them rest for 15 minutes, then break into small pieces.


2.For the chocolate base, heat the liquid together with the butter and sweetener.Add the chocolate and let it melt, then stir in the cocoa powder.

3.Add the almond–walnut mixture, the cookie pieces, vanilla, and salt.Mix well until you get a smooth, even mixture.


4.Divide the mixture into two parts and shape into logs using plastic wrap.Wrap tightly and refrigerate for at least 3–4 hours.
