"Woman’s Whim"

Ingredients:

  • 3 eggs, separated

  • 70 g (approx. 5 tbsp) butter at room temperature
  • Sweetener to taste
  • 3 tablespoons almond flour
  • 1 tablespoon coconut flour
  • 2 teaspoons bamboo fiber flour
  • A pinch of baking powder
  • A pinch of salt
  • A few drops of vanilla extract
  • A splash of plant-based milk
  • Sugar-free apricot jam


Instructions:

  1. Beat the egg whites until stiff peaks form.

  2. In a separate bowl, mix the egg yolks with the butter, then add the rest of the ingredients along with half of the beaten egg whites.
  3. Pour the mixture into a 10x10 cm (4x4 inch) baking dish.
  4. Bake at 170°C (340°F) for 15 minutes.
  5. Remove from the oven, spread a thin layer of sugar-free apricot jam on top, then gently smooth the remaining egg whites over it.
  6. Return to the oven for another 5–8 minutes, until the top gets a light golden color.
