"Woman’s Whim" Ingredients: 3 eggs, separated 70 g (approx. 5 tbsp) butter at room temperature Sweetener to taste 3 tablespoons almond flour 1 tablespoon coconut flour 2 teaspoons bamboo fiber flour A pinch of baking powder A pinch of salt A few drops of vanilla extract A splash of plant-based milk Sugar-free apricot jam
Instructions: Beat the egg whites until stiff peaks form. In a separate bowl, mix the egg yolks with the butter, then add the rest of the ingredients along with half of the beaten egg whites. Pour the mixture into a 10x10 cm (4x4 inch) baking dish. Bake at 170°C (340°F) for 15 minutes. Remove from the oven, spread a thin layer of sugar-free apricot jam on top, then gently smooth the remaining egg whites over it. Return to the oven for another 5–8 minutes, until the top gets a light golden color.
